Reduced Fat Triple Chocolate Chunk Cookies

  • 1/4 cup butter or stick margarine, softened
  • 2/3 cup sugar
  • 1/3 cup packed brown sugar
  • 2 large egg whites
  • 1 tsp. vanilla
  • 1 1/2 cups flour
  • 1/2 cup cocoa
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/3 cup strong coffee, cooled
  • 1/2 cup chocolate chips or chunks
  • 1/2 cup chopped white chocolate
Preheat oven to 350*F.
In a large bowl, beat butter, sugar and brown sugar until well blended - the mixture will have the consistency of wet sand. Beat in egg whites and vanilla until smooth.

In a medium bowl, combine flour, cocoa, baking soda and salt. Add the flour mixture and the coffee to the sugar mixture, and stir by hand just until combined. Stir in the chocolate chips and white chocolate chunks.

Drop spoonfuls of dough about 2" apart on a cookie sheet that has been sprayed with non-stick spray. Bake for 12-15 minutes, until just set around the edges but still slightly soft in the middle. Transfer to a wire rack to cool.
Makes 2 dozen cookies.

Per cookie: 120 calories, 4.2 g fat (1.6 g saturated fat, 2 g monounsaturated fat, 0.3 g polyunsaturated fat), 20 g carbohydrates, 1.5 mg cholesterol, 112 mg sodium, 1.2 g fiber, 30% calories from fat.
