Get Fresh With Me Summer Salad

You goat, girl. You’re all about eating your leafy greens for gorgeous skin and not-too-curvy curves—and you’re not afraid to walk on the wild side of the diary aisle. Kasseri cheese, a Greek cheese made from goat’s or sheep’s milk, has a sharp, salty flavor that adds a bit of mischief to an otherwise good-girl salad.

To further stimulate your discerning tastebuds, the divas look to lacy fronds of fresh dill, minced just so, and a verdant flourish of sliced spring onions. The vinaigrette? A way-too-easy elegant lemon and olive oil affair.

Prep Time: 10 minutes

Ingredients:

  • 1 bunch romaine lettuce, torn into bite-size pieces
  • 2 tablespoons fresh dill, chopped
  • 4 green onions, thinly diagonally sliced
  • 1/2 cup shredded kasseri cheese
  • Juice of 1 lemon
  • 1/2 teaspoon coarse salt
  • Cracked black pepper, to taste
  • 2 tablespoons extra-virgin olive oil

Preparation:

Yield: 8 servings

1. In a salad bowl, toss the lettuce, dill and green onions. Add the cheese and gently toss.

2. Whisk the lemon juice, salt and pepper, then slowly add the olive oil, whisking until well blended. Drizzle over the salad, toss, and serve.
